INGREDIENTS
Base Ingredients
- 🧈 1 tablespoon butter
- 🧄 2 cloves garlic, minced
- 🍅 ½ cup sun-dried tomatoes, chopped
- 🍗 1 cup chicken broth, divided
- 🥛 1 cup heavy cream

- 🍗 1 pound skinless, boneless chicken breast halves
- 🧂 salt and pepper to taste

- 2 tablespoons vegetable oil
- 2 tablespoons chopped fresh basil

- 8 ounces dry fettuccini pasta
STEPS
Melt butter in a large saucepan over low heat; add garlic and cook for 30 seconds. Add chopped sun-dried tomatoes and 3/4 cup chicken broth, bring to boil. Simmer until tomatoes are tender for about 10 minutes, then add heavy cream and bring to a boil while stirring.
Season chicken breasts with salt and pepper. Warm vegetable oil in a skillet over medium heat, sauté chicken for about 4 minutes per side until cooked through. Let chicken rest; discard fat from skillet.
In the skillet, boil 1/4 cup remaining chicken broth with pan juices. Combine with cream sauce, stir in fresh basil, and adjust for seasoning.
Cook fettuccine pasta in salted boiling water for 8 to 10 minutes. Drain and toss with a small amount of sauce.
Slice chicken into diagonal pieces and plate pasta. Top pasta with chicken slices and remaining cream sauce. Reheat gently if necessary and serve.
