INGREDIENTS
Stuffing
- 2 cups 1/2-inch bread cubes (such as walnut bread)
- 🧈 3 tablespoons butter
- 🧅 1/4 cup minced shallots
- 2 tablespoons chopped green onions
- 🧂 Salt and freshly ground black pepper to taste
- 1/4 cup dried cranberries
- 🍗 1 cup chicken broth
- 1 tablespoon chopped fresh thyme
- 1 teaspoon minced fresh rosemary
- 1/4 teaspoon dried sage
- 1 pinch cayenne pepper
- 🥚 1 large egg, beaten
Game Hens
- 3 tablespoons olive oil, divided, or as needed
- 3 sprigs fresh thyme, or to taste
- 3 sprigs fresh rosemary, or to taste
- 2 Cornish game hens
- 🍗 2/3 cup chicken broth
- 1/4 cup fresh cranberries
- 2 tablespoons maple syrup
STEPS
Preheat oven to 250°F (120°C). Spread bread cubes on a baking sheet and toast until golden and crispy, 20 to 40 minutes.
Melt butter in a skillet over medium heat. Cook shallots and green onions with a pinch of salt until soft. Add dried cranberries and cook for 2-3 minutes.
Pour chicken broth into the skillet and bring to a simmer. Mix the liquid into bread cubes along with thyme, rosemary, sage, cayenne, salt, and pepper. Stir in the beaten egg. Cover the mixture and let sit for 10-15 minutes.
Preheat oven to 400°F (200°C). Drizzle the bottom of a roasting pan with olive oil and arrange thyme and rosemary sprigs. Season hen cavities with salt and stuff with bread-cranberry mixture. Tie legs together, brush hens with olive oil, and season the skin with salt and pepper.
Bake hens for about 1 hour or until an instant-read thermometer inserted into the thigh reads 165°F (74°C). Let rest for 10 minutes under a foil tent.
Place roasting pan over medium-high heat and combine chicken broth, fresh cranberries, and maple syrup. Scrape pan drippings and cook until reduced, forming a sauce (1-3 minutes). Serve sauce over hens.
