INGREDIENTS
Batter
- 🥚 5 eggs, separated
- ¾ cup white sugar, divided
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- ¾ cup confectioners' sugar for dusting
Syrup
- 1 cup white sugar
- 💧 1 cup boiling water
- ☕ ½ cup strong brewed coffee
- ¼ cup rum
Filling
- 1 (8 ounce) container mascarpone cheese
- 2 cups confectioners' sugar
- ¼ cup dark rum
- 1 teaspoon vanilla extract
- 2 cups heavy cream
Decoration
- 2 (1 ounce) squares semisweet chocolate, grated
- ⅛ cup confectioners' sugar for dusting
STEPS
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Prepare the batter: whip egg yolks with sugar until thick and pale, whip egg whites to medium peaks, and fold together with flour and vanilla.
Trace two 9-inch circles onto parchment paper and spread batter inside the lines. Pipe ladyfinger batter in strips for the cake sides.
Bake batter rounds and strips in the oven for 10-15 minutes until firm but not browned. Dust with confectioners' sugar and cool.
Make the syrup: combine sugar, boiling water, coffee, and rum until dissolved.
Prepare the filling: whisk together mascarpone, confectioners' sugar, dark rum, vanilla, and heavy cream to soft peaks.
Assemble: layer ladyfinger rounds and strips in a springform pan, brush with syrup, and spread filling between layers. Top with grated chocolate.
Refrigerate at least 4 hours.
Dust with confectioners' sugar before serving.
