INGREDIENTES
Protein
- 🍗 100g ground chicken
- 50g mentaiko
Vegetables
- 🧅 1/3 stalk minced negi
Binders
- 100g hanpen
- 1 tbsp potato starch
Seasonings
- 🧂 1 tsp soy sauce
- 1 tbsp sake
Cooking Oil
- 1 tbsp salad oil
Sauce
- 2 tbsp mayonnaise
- 🥛 1 tsp milk
PASSOS
Cut open the mentaiko and extract the roe.
Finely mince the negi.
Mash the hanpen in a bag until smooth, then mix with ground chicken, half the mentaiko, negi, and seasonings. Knead until sticky and create a piping bag by cutting the corner of the bag.
Heat salad oil in a pan, pipe the mixture into the pan, shape it, and cook on low heat for 2 minutes until browned. Flip, cover with a lid, and cook for another 2 minutes.
Mix the remaining mentaiko with mayonnaise and milk in a bowl to create the mentaiko sauce.
Plate the cooked tsukune and drizzle with the mentaiko sauce.
