- 🐟 2 filleted horse mackers (140g)
- 🍄 1 king oyster mushroom (40g)
- 🥒 1/2 zucchini (85g)
- 2 tbsp olive oil
- 🍋 Lemon wedges, as needed
Herb Crust
- 🧄 1 clove garlic, minced
- 🌿 5g parsley, minced
- 🍞 3 tbsp breadcrumbs
- 🧀 2 tbsp grated Parmesan cheese
- 🧂 1/3 tsp salt
- Pepper, as needed
PASSOS
Slice the king oyster mushroom thinly lengthwise. Cut the zucchini into 5mm thick rounds. Mince garlic and parsley. Remove small bones from the horse mackerel fillets.
Mix all the herb crust ingredients (garlic, parsley, breadcrumbs, Parmesan cheese, salt, and pepper) in a bowl.
Arrange the horse mackerel, king oyster mushroom, and zucchini alternately in a heatproof dish. Sprinkle the herb crust mixture evenly over the top and drizzle with olive oil.
Bake in a toaster oven for 3 minutes until golden brown. Cover with aluminum foil and bake for another 7 minutes until cooked through. Serve with lemon wedges.
