  • Dressing

    • ¼ cup olive oil
    • 🍋 2 lemons, juiced
    • 🍯 2 tablespoons honey, or more to taste
    • 🧂 Salt and ground black pepper to taste

Heat 1 tablespoon olive oil in a skillet over medium heat. Cook and stir couscous in hot oil until toasted and fragrant, 3 to 4 minutes. Add water, bring to a boil, cover, reduce heat and simmer until tender—about 10 minutes. Drain and rinse under cold water, then transfer to a bowl.

Place lentils in a small pan, cover with water, boil, reduce heat to medium-low, simmer until tender (15 to 20 minutes). Drain and rinse under cold water; add to couscous.

Add diced cucumber, cranberries, raisins, red onion, chives, parsley, and sumac to couscous mixture.

Whisk olive oil, lemon juice, honey, salt, and pepper in a small bowl to prepare the dressing.
