Noodles
- 200g dried soba noodles
Meat
- 100g thinly sliced pork
Tofu
- 1 piece (20g) fried tofu
Egg
- 🥚 2 beaten eggs
Vegetables
- 🧅 1/3 stalk (55g) green onion, sliced
Seasoning
- 1/2 tbsp sake
- 1 tbsp mirin
- 🧂 1 tbsp soy sauce
- 1/2 tsp dashi powder
- 💧 100ml water
Soup Base
- 70ml concentrated noodle soup base
- 💧 500ml water
步骤
Slice the green onion diagonally.
Pat the fried tofu with a paper towel to remove excess oil, then cut it in half crosswise and slice into 1cm strips.
Boil water in a pot, cook the soba noodles according to the package instructions, then drain.
In a frying pan, combine the ☆ ingredients and bring to a boil. Add the pork and cook over medium heat until the color changes, skimming off any foam.
Add the fried tofu and green onion to the pan and simmer for 1 minute. Pour in the beaten eggs and cook until semi-set, then turn off the heat.
In a separate pot, heat the ★ ingredients. Place the cooked soba noodles in a bowl, pour the soup over them, and top with the egg mixture.
