INGREDIENTES
Rice
- 🍚 2 cups soaked Tsuyahime rice
Fish
- 🐟 2 cleaned sanma (220g)
Vegetables
- 🍠 180g sweet potato, diced
- 1 piece ginger, julienned
Cooking Oil
- 1 tsp salad oil
Sanma Seasoning
- 🧂 Pinch of salt
- 1 tbsp sake
- 🧂 1 tbsp soy sauce
Rice Seasoning
- 1 tbsp mirin
- 🧂 1 tbsp soy sauce
- 💧 350ml water
PASSOS
Dice sweet potato into 1.5cm cubes and soak in water. Drain. Julienne ginger.
Cut sanma diagonally in half and score each piece twice. Sprinkle with salt.
Heat salad oil in a pan over medium heat. Sear sanma until browned on both sides. Add sake and soy sauce, simmer until sauce reduces by half.
In a pot, mix soaked Tsuyahime rice with rice seasonings. Flatten the mixture. Add sweet potato and spread evenly. Place cooked sanma on top and drizzle remaining sauce. Sprinkle ginger.
Cover the pot and heat on medium until boiling. Reduce to low heat and cook for 12 minutes. Turn off heat and let it steam for 10 minutes.
Remove sanma's head and bones. Gently mix the rice and fish together.
