INGREDIENTS
Mashed Potatoes
- 🥔 5 potatoes, peeled and quartered
- 🧈 2 tablespoons butter
- 🥛 ¼ cup milk
- 🧄 ½ teaspoon garlic powder
- 🧂 ½ teaspoon salt
Beef and Vegetable Mixture
- 1 tablespoon olive oil
- 🧅 2 small onions, chopped
- 🥩 1 pound ground beef
- 🧄 3 cloves garlic, minced
- 🧂 1 teaspoon spicy seasoned salt
- 1 tablespoon taco seasoning
- 🍀 1 (10 ounce) package frozen peas
- 🌽 1 (10 ounce) package frozen corn
STEPS
Preheat oven to 350°F (175°C) and coat a 9-inch square baking dish with cooking spray.
Bring a large pot of salted water to a boil. Add potatoes and cook until tender enough to pierce with a fork; then drain and mash by hand.
Mix mashed potatoes with butter, milk, garlic powder, and salt. Set aside.
Heat olive oil in a skillet over medium heat. Add onions and cook until softened, approximately 8–10 minutes.
Add garlic, ground beef, spicy seasoned salt, and taco seasoning to the skillet. Cook until beef is no longer pink, then add peas and corn. Stir to combine.
Transfer beef and vegetable mixture to the prepared baking dish, then cover with the mashed potatoes.
Bake in the oven until the mashed potatoes are golden and the mixture is hot and bubbly, about 30–35 minutes.
