Mix the ground pork, green onion, sake, oyster sauce, ginger, and garlic in a bowl until sticky.

Place a halved shiso leaf, meat filling, and shrimp on a gyoza wrapper. Wet the edges and fold to seal. Repeat for all 10 wrappers.

Heat salad oil in a pan over medium heat. Place the gyoza in the pan and cook until the bottoms are golden brown.

Add water to the pan until it covers 1/4 of the gyoza. Cover and steam over low heat for 5 minutes.

Remove the lid, increase heat to medium, and evaporate the water. Add sesame oil and cook until crispy.
