INGREDIENTS
Custard
- 🥚 4 large eggs
- 🍬 ½ cup white sugar
- 🧂 ¼ teaspoon salt
- ⅓ cup all-purpose flour
- 1 tablespoon all-purpose flour
- 🥛 2 cups milk
- 1 tablespoon banana liqueur
- ½ teaspoon vanilla extract
- 🧈 1 tablespoon cold butter
Banana Layer
- 🍌 3 very ripe bananas, sliced
- 🍋 1 ½ teaspoons freshly squeezed lemon juice
- 1 (12 ounce) package miniature vanilla wafers
Meringue Topping
- ⅛ teaspoon cream of tartar
- 🍬 2 tablespoons white sugar
STEPS
Separate egg whites into the mixer bowl and yolks into a saucepan.
Prepare custard by combining yolks, sugar, salt, flour, and 1/4 of milk. Blend and add remaining milk. Whisk until smooth.
Cook custard over medium heat while stirring until thick enough to form ribbons.
Add banana liqueur, vanilla, and cold butter to the custard and whisk until smooth.
Preheat oven to 400°F (200°C).
Slice bananas and mix them with lemon juice.
Assemble the pudding layers of custard, vanilla wafers, and bananas into a baking dish.
Prepare meringue by beating egg whites with cream of tartar and sugar until peaks form. Spread over pudding.
Bake for 7-10 minutes or until meringue is browned.
