INGREDIENTS
Rice & Water
- π§ 1 1/2 cups water
- π 1 1/4 cups white rice
Coconut Mixture
- π₯₯ 1 (13.5 to 14 ounce) can unsweetened coconut milk
- π§ 1/2 cup sugar
- π§ 1/2 teaspoon salt
Passion Fruit Sauce
- 1 teaspoon tapioca starch
- π 2 tablespoons passion fruit puree
- π 1/4 cup pomegranate arils
STEPS
Combine water and rice in a saucepan. Bring to a boil, reduce heat to low, and simmer covered for 15-20 minutes until water is absorbed. Let stand for 10 minutes.
In a small saucepan, mix coconut milk, sugar, and salt. Bring to a boil, stirring frequently. Remove from heat.
Reserve 1/3 cup of the coconut milk mixture for the sauce. Pour the rest over the cooked rice and gently mix. Let it cool, covered, for 1 hour.
Whisk tapioca starch with the reserved coconut milk mixture. Boil over high heat until thickened, about 2 minutes. Stir in passion fruit puree and remove from heat.
To serve, stir the rice, drizzle with the passion fruit sauce, and sprinkle with pomegranate arils.
