INGREDIENTES
Main Ingredients
- 🥩 500g beef brisket
- 100g chives
- 🍄 1 pack enoki mushrooms
Boiling Ingredients
- 1 stalk green onion
- 🧅 1/2 onion
- 🧄 4 cloves garlic
- 1 piece ginger
- 8 black peppercorns
Sauce Ingredients
- 2 tbsp soy sauce
- 2 tbsp water
- 1 tbsp mirin
- 1/2 tbsp sugar
- 1 tbsp vinegar
- 🧅 1/4 onion, chopped
- 1 green chili, sliced
Broth Ingredients
- 3 cups beef bone broth
- 🧂 Pinch of salt
- Pinch of pepper
PASSOS
Soak the beef brisket in cold water for 30 minutes to remove excess blood.
In a pot, add enough water to cover the beef along with the boiling ingredients. Bring to a boil, then add the beef and simmer for 1 hour.
Slice the cooked beef brisket thinly.
Prepare the vegetables: cut the chives into 7 cm lengths, trim the enoki mushroom stems, slice the chili into rings, and chop the onion. Mix the sauce ingredients together.
Arrange the chives and mushrooms in a pot, place the sliced beef on top, and pour the broth ingredients over. Bring to a boil, then reduce heat and simmer for 2 minutes.
Serve the beef and vegetables with the sauce on the side. Optionally, add noodles or rice to the leftover broth for a second dish.
