INGREDIENTS

  • Sauce

    • 1 tablespoon wasabi paste
    • 🥢 1 teaspoon soy sauce
    • 🥄 2 tablespoons mayonnaise
  • Rice Base

    • 1 cup sushi rice
  • Vegetables

    • 🥕 1/2 cup matchstick carrots
    • 🥒 1/2 cup matchstick cucumbers
    • 1/2 cup frozen shelled edamame
  • Optional Garnishes

    • 2 tablespoons ginger to taste
    • 1/2 teaspoon sesame seeds

STEPS

1

Combine wasabi paste, soy sauce, and mayonnaise in a small zippered food storage bag to create wasabi aioli. Mix thoroughly, taste, and adjust wasabi to preference. Seal and refrigerate.

2

Prepare sushi rice according to package instructions. Place about 1/8 cup of cooked rice into each of 8 silicone muffin cups. Use damp fingertips to press rice firmly into shape, molding some up the sides of the cup. Refrigerate for at least 20 minutes.

3

For assembly, fill each rice cup with matchstick carrots, cucumbers, and edamame. Place a shrimp half on top of each cup.

4

Cut off a corner of the wasabi aioli bag and drizzle it over the top of each sushi cup. Garnish with optional sesame seeds and ginger. Serve immediately.
