- 6 slices pork belly (100g)
Vegetables
- 3 asparagus spears (60g)
- 30g shimeji mushrooms
Condiments
- 🧂 Pinch of salt and pepper
- 1 tbsp cornstarch
- 1/2 tbsp salad oil
Seasoning
- 🧈 10g salted butter
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
Fruit
- 🍋 1/2 lemon, sliced and juiced
步骤
Trim the asparagus ends, peel the lower half with a peeler, and cut in half. Separate shimeji mushrooms by hand. Slice 3 pieces of lemon thinly and quarter them. Juice the remaining lemon.
Place a slice of pork belly vertically, season with salt and pepper, and roll 1/6 of the asparagus at the edge. Repeat to make 6 rolls. Coat each roll with cornstarch.
Heat salad oil in a pan over medium heat. Place the rolls seam-side down and cook for 1–2 minutes until browned. Flip and add shimeji mushrooms, stir briefly, cover, and cook on low heat for 2 minutes until pork is cooked through.
Add the seasoning ingredients and lemon juice to the pan. Heat over medium heat, stirring for 2–3 minutes until thickened. Add lemon slices and stir briefly.
