Meat
- 🐖 600g pork belly block
Vegetables
- 🧅 10cm green onion tops
- 3–4 slices ginger
- 🥬 spinach, as needed
Condiments
- 🌭 mustard, as needed
Broth
- 100cc sake
- 🍬 50g sugar
- 🧂 150cc soy sauce
- 5–6 slices ginger
- 💧 800cc water
- 1 piece star anise
步骤
Cut the pork belly into 3cm-wide pieces.
Place pork, green onion tops, and ginger into a pot. Add plenty of water and bring to a boil. Simmer on low heat for 40–50 minutes, then drain and rinse under running water.
Add the broth ingredients (sake, sugar, soy sauce, ginger, water, star anise) and pork to a pot. Heat until boiling, then simmer on low for 30 minutes and let cool.
Reheat the dish, reducing the broth while coating the pork. Serve with spinach and mustard on the side.
