- 1/2 yellow bell pepper, diced
- 🍅 8 cherry tomatoes, halved
- 🥒 1 cucumber, diced
- 🥬 4 lettuce leaves, chopped
Legumes
- 🌱 100g mixed beans
Nuts
- 🌰 Chopped walnuts, as needed
Seasoning
- 🧂 Pinch of salt
- 1 tbsp sake
Dressing
- 4 tbsp mayonnaise
- 🧄 1/3 tsp grated garlic
- 🍋 1 tbsp lemon juice
- 🥛 2 tbsp milk
- 🧀 1 tbsp grated Parmesan cheese
- 🧂 1/3 tsp salt
- Pinch of pepper

Mix all dressing ingredients in a bowl.

Dice the yellow bell pepper, cucumber, and halve the cherry tomatoes. Chop the lettuce and walnuts.

Pierce the chicken breast with a fork, season with salt and sake, and microwave for 2.5 minutes at 600W.

Let the chicken cool under the wrap, then dice into 1cm cubes.

Combine vegetables, beans, walnuts, chicken, and dressing in a bowl. Mix gently.
