Separate cauliflower into small florets. Slice the onion thinly and trim the root of shimeji mushrooms, breaking them apart.

Remove the skin from the salmon and cut into 2cm cubes.

Heat olive oil in a frying pan over low heat. Add onion and sauté until softened, then add salmon and cook until its color changes.

Add cauliflower and shimeji mushrooms to the pan. Cook until the mushrooms are tender. Season with salt and pepper.

In a bowl, mix eggs, milk, and grated cheese to create the egg mixture.

Roll out the pastry sheet slightly larger than the tart pan. Grease the pan with butter and fit the pastry sheet inside. Poke 10 holes with a fork.

Add the sautéed ingredients to the tart pan and pour the egg mixture over them. Bake in a preheated oven at 200°C for 30–40 minutes.
