Separate celery stalks and leaves. Remove strings from stalks and dice into 1cm cubes. Cut leaves into bite-sized pieces. Dice the tomato into 1cm cubes. Cut baby cheese into 6 pieces each.

In a bowl, mix soy sauce, wasabi, and olive oil. Add celery, tuna, tomato, and baby cheese, then toss to combine.
