Protein
- 🍗 1 piece (250g) chicken thigh
Vegetables
- 🍅 1 tomato (200g), diced
- 🧅 1/2 onion (100g), sliced
- 🥔 2 potatoes (300g), chopped
- 1/2 pack (50g) shimeji mushrooms
Seasoning
- 🧂 A pinch of salt and pepper
- 1 tbsp olive oil
- 1 tsp sugar
- 🧂 1/2 tsp salt
- 1/2 tsp consomme
- 🧂 A pinch of pepper
- 💧 100ml water
步骤
Dice the tomato into 2cm cubes, slice the onion thinly, chop the potatoes into bite-sized pieces and soak them in water, then drain. Trim and separate the shimeji mushrooms.
Cut the chicken into bite-sized pieces and season with salt and pepper.
Heat olive oil in a pan over medium heat. Place chicken skin-side down and cook until browned on both sides. Add onion, potatoes, and shimeji mushrooms, stirring until coated with oil.
Add diced tomato and seasoning ingredients (☆), stir well, and bring to a boil. Cover and simmer on low heat for 10–12 minutes until the chicken is cooked and potatoes are tender.
