- 🍗 1 piece (250g) chicken thigh

- 🍠 1 medium sweet potato (180g)
- 1/2 bag baby leaf greens

- Pinch of pepper
- 1 tbsp olive oil
Dressing
- 🧂 1/3 tsp salt
- 1 tbsp vinegar
- 2 tbsp olive oil
- Pinch of pepper
步骤
Remove excess fat from chicken thigh, pierce the skin with a fork, and season with salt and pepper.
Cut the sweet potato into bite-sized chunks using a rolling cut method and soak in water to remove excess starch.
Heat olive oil in a pan, place chicken skin-side down, and add sweet potato to the empty space. Cook over medium-low heat for 10–15 minutes until the chicken skin is crispy and sweet potato is tender, flipping the sweet potato occasionally.
Flip the chicken and cook on low heat for an additional 5 minutes until fully cooked. Slice the chicken into bite-sized pieces.
Mix the dressing ingredients (salt, vinegar, olive oil, pepper) in a bowl.
Arrange baby leaf greens and sweet potato on a plate, drizzle with dressing, top with chicken pieces, and sprinkle cottage cheese.
