Protein
- 🍗 1 piece (250g) chicken thigh
Vegetables
- 🍄 1 pack (100g) shimeji mushrooms
- 🍄 1 piece (40g) enoki mushrooms
- 🍄 1 pack (100g) maitake mushrooms
Seasoning
- 🧂 A pinch of salt and pepper
- 1 1/2 tbsp soy sauce
- 1 tbsp mirin
- 🧈 10g salted butter
Oil
- 1 tbsp salad oil
步骤
Trim the root of shimeji mushrooms and separate them. Slice enoki mushrooms lengthwise and halve them. Separate maitake mushrooms.
Cut chicken into bite-sized pieces and season with salt and pepper.
Heat half of the salad oil in a frying pan over medium heat. Place chicken skin-side down and cook for 2–3 minutes until browned. Flip and push to one side. Add remaining oil and mushrooms to the empty space, stir to coat with oil, cover, and steam for 1 minute.
Remove the lid and stir-fry until mushrooms soften and chicken is fully cooked. Add soy sauce, mirin, and butter, stirring until well combined.
