步骤
Remove seeds and pulp from the pumpkin, peel, and cut into bite-sized pieces. Place in a microwave-safe dish, cover loosely with plastic wrap, and microwave at 600W for 6 minutes.
Mash the hot pumpkin and mix in a bowl with cream cheese, honey, and salt and pepper until smooth. Cool to room temperature and refrigerate.
In a separate bowl, mix the dressing ingredients (mayonnaise, grated cheese, vinegar, salt, and pepper). Serve the pumpkin salad with the dressing and top with sliced almonds.
