食材
Main
- 1 piece fried tofu (20g)
- 5cm daikon (150g), julienned
- 1/2 pack kaiware sprouts
Dressing
- 1 umeboshi, mashed
- 🍬 1/2 tsp sugar
- 1 tbsp vinegar
- 1/2 tbsp soy sauce
- 1 tbsp olive oil
Topping
- 1 packet bonito flakes (4g)

Julienne the daikon and soak in water for 5 minutes. Drain well. Cut the kaiware sprouts in half. Mash the umeboshi into a paste.

Cut the fried tofu in half horizontally and slice into 8mm strips. Place on a foil-lined tray and toast in a toaster for about 3 minutes until golden.

Mix all dressing ingredients in a bowl. Add daikon, kaiware sprouts, and fried tofu, then toss gently.

Plate the salad and top with bonito flakes.
