Main Ingredients
- 2 chikuwa sticks
- 🍆 2 eggplants (160g)
Seasonings
- 🍬 1 tsp sugar
- 1 tbsp vinegar
- 1/2 tbsp sesame oil
- 1 tsp gochujang
- 🧄 1/4 tsp grated garlic

Cut the eggplants in half lengthwise. Soak them in water for 3 minutes, then wrap them with cling film while still moist. Place on a microwave-safe plate and heat at 600W for 3 minutes. Let cool, remove the stem, and tear into bite-sized pieces.

Slice the chikuwa into 5mm thick pieces.

In a bowl, mix all the seasonings (☆). Add the eggplants and chikuwa, then toss to combine.
