Rice
- 🍚 2 cups rice
Seafood
- 🦐 12 peeled shrimp
Vegetables
- 🥕 1/2 carrot (70g)
- 5cm lotus root (100g)
- 3 dried shiitake mushrooms
- 1/2 bamboo shoot (100g)
- 4 snap peas
Tofu
- 1 piece freeze-dried tofu
Seasoning
- 2 tsp salad oil
- 2 tbsp white sesame seeds
- 3 tbsp sugar
- 🧂 1 tsp salt
- 4 tbsp vinegar
Broth
- 2 tbsp sugar
- 2 tbsp mirin
- 2 tsp soy sauce
- 🧂 1/3 tsp salt
- 1/3 tsp dashi powder
- 100ml shiitake soaking water
- 💧 100ml water
Egg
- 🥚 2 eggs
- 1 tsp sugar
- 🧂 a pinch of salt
Toppings
- to taste sakura denbu
步骤
Cook 2 cups of rice in a rice cooker with the appropriate amount of water.
Mix sugar, salt, and vinegar in a bowl to make the sushi vinegar.
Rehydrate dried shiitake mushrooms in water, keeping 100ml of the soaking water. Slice the mushrooms thinly.
Prepare the vegetables: slice carrots, lotus root, and bamboo shoots thinly. Soak lotus root in water to remove bitterness.
In a pot, combine the broth ingredients and bring to a boil. Add mushrooms, tofu, and vegetables, then simmer for 10 minutes. Let cool.
Blanch snap peas in boiling water, then cool in ice water. Slice diagonally. Boil shrimp until cooked and set aside.
Beat eggs with sugar and salt. Cook thin omelets in a pan, roll, and slice into thin strips.
Mix the sushi vinegar into the cooked rice, cutting and folding gently. Add sesame seeds and mix.
Combine the cooked vegetables with the rice, mixing gently.
Plate the sushi rice and garnish with egg strips, sakura denbu, shrimp, and snap peas.
