- 🐟 220g Pacific saury fillets
- 1/2 tbsp salad oil
Condiments
- 🧅 1/4 stalk white part of green onion
- 3 shiso leaves
- 1 myoga ginger
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1 tsp ginger juice
Garnish
- 🍋 2 lemon wedges
步骤
Slice the green onion, shiso leaves, and myoga ginger thinly. Soak the green onion slices in water for 5 minutes, then drain.
Heat salad oil in a frying pan over medium heat. Place the Pacific saury fillets skin-side down and cook until browned. Flip, cover, and steam on low heat for 3 minutes. Remove and debone while cooling.
In the same pan, combine sake, mirin, soy sauce, and ginger juice. Heat over medium until boiling, then remove from heat.
Plate the saury fillets, drizzle with the sauce, and top with the sliced condiments. Serve with lemon wedges.
