Main
- 🍗 150g chicken thigh
- 180g daikon (6cm)
- 🥕 75g carrot (1/2 piece)
- 60g burdock (20cm)
- 2 shiitake mushrooms
- 🧅 70g green onion (1/2 piece)
Hittsumi Dough
- 150g all-purpose flour
- 💧 70cc water
- 🧂 A pinch of salt
Soup Base
- 💧 700cc water
- 1 tbsp sake
- 1 tbsp mirin
- 1/2 tsp Japanese dashi powder
- 1.5 tbsp soy sauce
步骤
Mix 70cc water with a pinch of salt to create saltwater.
Add all-purpose flour to a bowl and gradually mix in the saltwater. Knead until the dough reaches an ear-lobe softness. Cover with plastic wrap and let rest at room temperature for 1 hour.
Prepare vegetables: cut daikon into quarter slices, carrot into half-moon slices, burdock into thin shavings, shiitake mushrooms into thin slices, and green onion into diagonal slices. Soak burdock in water briefly and drain.
Cut chicken thigh into bite-sized pieces.
In a pot, combine chicken, all soup base ingredients except soy sauce. Bring to a boil over medium heat, skim off foam, add prepared vegetables, and simmer covered on low heat for 10 minutes.
Increase heat to medium, tear dough into small pieces, flatten slightly, and add to the pot. Stir occasionally and cook uncovered for 5 minutes until the dough is cooked through. Add soy sauce and bring to a boil.
