- 🐟 140g horse mackerel (filleted)
Vegetables
- 🍆 3 eggplants
- 🍅 6 cherry tomatoes
- 6 shiso leaves

- 1 tbsp potato starch
- Salad oil as needed
Nanban Sauce
- 🧂 2 tbsp sugar
- 4 tbsp vinegar
- 4 tbsp soy sauce
- 💧 150ml water
- 1 tsp sliced chili pepper
步骤
Cut horse mackerel into bite-sized pieces, coat with potato starch, and shake off excess powder.
Trim eggplant stems and cut into irregular chunks. Halve cherry tomatoes and slice shiso leaves thinly.
Mix all Nanban sauce ingredients in a large bowl.
Heat salad oil in a pan to 170°C, fry eggplants for 3 minutes, then transfer to Nanban sauce. Fry horse mackerel until golden brown and cooked through, then transfer to Nanban sauce.
Add cherry tomatoes to the Nanban sauce, immerse everything, and marinate for 15 minutes. Serve on a plate and garnish with shiso leaves.
