步骤
Remove scales by moving the knife from the tail towards the head. Cut off the head at the base of the pectoral fins. Slice open the belly from the vent to the tail fin and remove the guts. Rinse the insides and blood under running water.
Pat the sardine dry. Hold it belly-side down and insert your thumb along the backbone near the head. Slide your finger down towards the tail to open the fish. Break the backbone at the tail and peel it away towards the head. Use the knife to gently remove the rib bones.
