Vegetables
- 200g daikon, peeled and grated
- 60g mizuna, cut into 3cm pieces
Condiments
- 1 tsp olive oil
- Ponzu sauce, as needed
Hamburg Mix
- 80g fresh okara
- 150g mixed ground meat
- 50g enoki mushrooms, minced
- 🧅 3 tbsp minced green onion
- 2 tbsp sake
- 🧂 1/4 tsp salt
- A pinch of pepper
- 1 tbsp potato starch
步骤
Mince the enoki mushrooms and prepare the green onion.
Combine all ingredients marked with ☆ in a bowl and mix until sticky. Divide into two portions and shape into oval patties.
Grate the daikon and lightly squeeze out excess water. Cut mizuna into 3cm pieces and soak in cold water to crisp, then drain.
Heat olive oil in a frying pan over medium heat. Cook the patties for 2–3 minutes until browned, then flip. Cover and cook on low heat for 8 minutes.
Plate the patties, garnish with mizuna, top with grated daikon, and drizzle with ponzu sauce.
