Seafood
- 🦪 10 oysters (approx. 200g)
Cheese / Dairy
- 🧈 1 block firm tofu (approx. 300g)
Vegetables
- 1 bunch chives (approx. 100g)
Broth
- 1 sheet kombu (10cm x 10cm)
Thickener
- 2 tbsp potato starch
Seasoning
- 1/4 cup sake
- 3 tbsp soy sauce
- 1 tbsp mirin
- 1/2–1 tsp chili paste

Rinse the oysters thoroughly and pat dry. Coat them lightly with potato starch.

Cut the tofu into bite-sized cubes and chop the chives into 5cm pieces.

Prepare the broth by combining sake, soy sauce, mirin, chili paste, and kombu in a pot. Bring to a boil.

Add the tofu and oysters to the boiling broth. Cook for 5–7 minutes until oysters are tender.

Add the chives and cook for an additional 2 minutes. Serve hot.
