- 4cm (120g) daikon, peeled
- 1 cucumber (100g), sliced diagonally
Seasonings
- 1 tsp vinegar
- 1 tbsp concentrated soy sauce (3x)
- 1/2 tsp wasabi
- 1/2 tbsp water

Peel the daikon thickly, cut it into quarters lengthwise, and slice into 5mm thick pieces. Trim the ends of the cucumber and slice diagonally into 5mm thick pieces.

In a storage bag, mix the seasonings (vinegar, soy sauce, wasabi, and water). Add the daikon and cucumber slices, lightly massage them, remove air from the bag, seal it, and refrigerate for about 30 minutes.
