Main
- 🐖 100g pork loin shabu-shabu slices
- 茄子 2 eggplants, peeled and sliced
- 🧅 50g grated onion
- 1 myoga, thinly sliced
- 3 shiso leaves, torn
Sauce
- 2 tbsp concentrated mentsuyu
- 2 umeboshi, mashed into paste
- A pinch of pepper
- 💧 2 tbsp water

Peel the eggplants in stripes and slice them into 5mm rounds. Rub with salt in water for 5 minutes, rinse, and drain. Mash umeboshi into paste and grate the onion. Slice myoga thinly.

Boil water in a pot and cook pork slices one by one until fully cooked. Remove and drain.

Mix the sauce ingredients in a bowl, add grated onion, then combine pork, eggplants, myoga, and torn shiso leaves.
