- 🍄 1 pack shimeji mushrooms
- 🥔 2 medium potatoes (300g)
Condiments
- 1 tbsp mayonnaise
- 🧂 1/3 tsp salt
- A pinch of black pepper

- 🌿 Chopped parsley, as needed
步骤
Trim the root ends of the shimeji mushrooms and separate them into bite-sized pieces by hand. Cut the potatoes into bite-sized pieces and soak them in water, then drain.
Place the potatoes in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 5 minutes.
Heat mayonnaise in a frying pan over medium heat. Add the potatoes and stir-fry until golden brown. Add the shimeji mushrooms and stir-fry for 1 minute. Season with salt and pepper to taste.
Transfer the stir-fry to a serving dish and sprinkle with chopped parsley.
