Vegetables
- 🎃 150g pumpkin, diced
- 🥔 150g potato, peeled and diced
- 🥒 50g cucumber, thinly sliced
Seasoning
- 🧂 1 pinch salt
- 2 tbsp mayonnaise
- A dash of pepper
- 🧂 1/3 tsp salt
- 1 tsp vinegar
步骤
Slice the cucumber thinly, mix with a pinch of salt in a bowl, and let sit for 10 minutes until softened. Squeeze out excess water.
Remove seeds and pulp from the pumpkin, dice into 2cm pieces. Peel and dice the potato into bite-sized pieces. Place both in a microwave-safe container with 1 tbsp water, cover loosely with plastic wrap, and microwave at 600W for 5 minutes. Drain water and return to the container.
While still hot, add the seasoning mix (salt and vinegar) to the pumpkin and potato. Mash roughly with a fork and let cool.
Add the cucumber, mayonnaise, and pepper to the cooled mixture. Mix until the mayonnaise is evenly incorporated.
