Remove seeds and pulp from the pumpkin, cut into bite-sized pieces, and slice thinly.

Place the pumpkin slices in a microwave-safe container, add 1 tbsp of water, cover loosely with plastic wrap, and microwave at 600W for 50 seconds. Drain and let cool.

Transfer the pumpkin slices to a storage bag, add soy sauce and water, and mix well. Seal the bag while removing excess air, then refrigerate overnight.
