Vegetables
- 1/2 bag baby leaf greens
- 🍅 4 mini tomatoes, quartered
- 🥒 1/3 cucumber, sliced into 7mm pieces
Protein
- 30g steamed soybeans
- 2 crab sticks, cut into 1cm pieces
Dressing
- 🍋 1/2 tbsp lemon juice
- 1/2 tbsp olive oil
- 🧂 Pinch of salt and pepper

Wash and drain the baby leaf greens. Quarter the mini tomatoes. Slice the cucumber lengthwise into quarters, then cut into 7mm pieces. Cut the crab sticks into 1cm pieces.

In a bowl, combine the mini tomatoes, cucumber, crab sticks, steamed soybeans, and dressing ingredients (lemon juice, olive oil, salt, and pepper). Toss well.

Plate the baby leaf greens and top with the mixed salad from step 2.
