Vegetables
- 10cm lotus root (400g)
- 4 shishito peppers
Seasoning
- Potato starch as needed
- Salad oil as needed
- 🍋 1/4 lemon (cut into wedges)
☆ Pork Filling
- 140g ground pork
- 🧅 1/4 green onion (minced)
- 2 tsp soy sauce
- 🧂 A pinch of salt
- 1/2 tsp grated ginger
- 1 tbsp potato starch
★ Shrimp Filling
- 🍤 140g peeled shrimp
- 🧅 1/4 green onion (minced)
- 2 tsp soy sauce
- 🧂 A pinch of salt
- 1/2 tsp grated ginger
- 1 tbsp potato starch
步骤
Slice lotus root into 5mm thick pieces (20 slices total) and pat dry with a paper towel. Make a small cut in each shishito pepper. Mince the green onion and divide into two portions.
Chop the shrimp finely and mash into a paste.
Mix all ☆ Pork Filling ingredients in a bowl until sticky.
Mix all ★ Shrimp Filling ingredients in a bowl until sticky.
Dust one side of each lotus root slice with potato starch. Place 1/5 of the pork filling on one slice and sandwich with another slice. Repeat with shrimp filling for five pieces each. Dust the surface with potato starch.
Heat salad oil in a pot to 170°C. Fry the stuffed lotus root pieces until golden brown on both sides.
Quickly fry the shishito peppers in the same oil.
Cut the fried lotus root pieces in half and plate them. Garnish with shishito peppers and lemon wedges.
