Cut the eggplants in half lengthwise, then slice diagonally into thin pieces (3mm). Place them in a bowl with 1 tbsp salt and enough water to cover. Mix and let sit for 10 minutes. Rinse and squeeze out excess water. Slice the myoga diagonally into thin pieces.

In a bowl, mix men-tsuyu, water, and grated ginger. Add the eggplants, myoga, and shirasu, then toss to combine.
