食材
Noodles
- 2 bundles dried soba noodles
Soup Base
- 80cc concentrated soy sauce soup base
- 💧 500cc water
Tempura Ingredients
- 1/2 burdock root
- 2 tbsp cornstarch
- 🦐 120g peeled shrimp
- 1 bunch mitsuba
- As needed vegetable oil
Tempura Batter
- 100g all-purpose flour
- 🥚 1 egg
- 💧 150cc cold water
步骤
Peel burdock root with a peeler, soak in water, and drain. Cut mitsuba into thirds and pat shrimp dry.
Mix cornstarch and burdock root in a plastic bag.
In a bowl, mix tempura batter ingredients. Add shrimp and mitsuba, and gently combine.
Heat vegetable oil to 170°C. Scoop batter with a spatula, place burdock on top, and fry for 3–5 minutes.
Boil water in a pot and cook soba noodles according to package instructions.
Heat soy sauce soup base and water in a pot until boiling. Serve soba in bowls, pour soup over, and top with tempura.
