- 🎃 300g pumpkin, cut into bite-sized pieces
Seasonings
- 1.5 tbsp mirin
- 1.5 tbsp mentsuyu (3x concentrated)
- 💧 150ml water

Remove seeds and pulp from the pumpkin, then cut it into bite-sized pieces.

Place the pumpkin pieces skin-side down in a pot. Add the remaining ingredients (mirin, mentsuyu, and water) and bring to a boil over medium heat.

Reduce to low heat, cover with a drop lid, and simmer for 8–10 minutes until the pumpkin becomes tender.
