- 1 kg pork ribs

- Green chili as desired
Seasonings
- 3 tbsp gochujang
- 4 tbsp red pepper powder
- 5 tbsp soy sauce
- 🧄 2 tbsp minced garlic
- 🧂 1 tbsp sugar
- 1 tbsp corn syrup
- 1 tbsp oyster sauce
- 1 tbsp plum extract
- 3 tbsp cooking wine
- 🧅 1/2 grated onion
- 1 tbsp sesame oil
- A pinch of black pepper
步骤
Soak pork ribs in cold water for 1 hour to remove blood, changing water 2–3 times.
Prepare the seasoning mix by combining gochujang, red pepper powder, soy sauce, minced garlic, sugar, corn syrup, oyster sauce, plum extract, cooking wine, grated onion, sesame oil, and black pepper.
Boil the pork ribs in water with 1/2 cup cooking wine for 10–15 minutes, then rinse under cold water.
Remove the transparent membrane from the back of the ribs for a softer texture.
Cut the ribs into individual pieces and coat them evenly with 2/3 of the prepared seasoning.
Cook the ribs with 1 cup of water in a pressure cooker for 30 minutes or in a pot for 50 minutes, adding water as needed.
Transfer the ribs to a pot, add 1 cup of water, remaining seasoning, and grated onion, then simmer until thickened.
Add mozzarella cheese on top and melt it over low heat.
