Noodles
- 🍜 150g somen noodles
Seafood
- 🐟 4 tbsp shirasu
Vegetables
- 🍆 1 eggplant, thinly sliced
- 4 shiso leaves, julienned
Seasoning
- 🌾 1 tsp white sesame seeds
Spicy Sauce
- 2 tbsp mentsuyu (3x concentrated)
- 💧 100ml water
- 1 tsp doubanjiang
- 1 tbsp sesame oil
- 🌾 1 tbsp white sesame seeds
步骤
Cut the eggplant into thin diagonal slices after removing the stem. Julienne the shiso leaves.
In a bowl, mix all the ingredients for the spicy sauce (☆).
Boil water in a pot, add the somen noodles, and cook according to the package instructions. Add the eggplant halfway through cooking. Drain and rinse under cold water.
Plate the noodles and eggplant, top with shirasu, spicy sauce, shiso leaves, and sprinkle with white sesame seeds.
