Main Ingredients
- 🍠 300g raw sweet potato
- 🧈 100g melted unsalted butter
- 🍬 80g sugar
- 🥚 2 eggs
- 🥛 50g milk
- 1 tsp vanilla extract
- 30g cake flour
- 4g baking powder
Topping
- 🌰 Black sesame seeds, as needed
步骤
Slice the sweet potato thinly.
Place the sweet potato slices in a microwave-safe dish and cover with plastic wrap.
Microwave at 600W for 5–6 minutes.
Mash the sweet potato while warm.
In a bowl, mix melted butter and sugar.
Gradually add beaten eggs and mix well. Then add milk and mix again.
Add the mashed sweet potato and mix until combined.
Add the dry ingredients and mix until just combined.
Fill muffin molds up to 70% full and sprinkle black sesame seeds on top.
Bake at 170°C for 20–25 minutes.
