Pierce the nagaimo with a fork and lightly roast it over direct heat about 10cm away. Use a cloth to remove the hairy roots.

Place the nagaimo in a plastic bag and crush it with a rolling pin. Add salted kombu and white dashi, then knead the bag to mix.
