Tofu
- 1 piece (160g) thick fried tofu
Egg
- 🥚 2 eggs
Vegetable
- 🧅 1/2 stalk green onion, thinly sliced
Oil
- 2 tsp salad oil
Seasoning
- 2 tbsp concentrated soy sauce (3x)
- 💧 50ml water

Cut the thick fried tofu in half lengthwise, then slice into 1cm pieces. Thinly slice the green onion diagonally. Crack the eggs into a bowl and mix.

Heat salad oil in a frying pan and add the tofu and green onion. Stir-fry over medium heat.

Once the green onion softens, add the soy sauce and water. Bring to a boil.

Pour the beaten eggs into the pan. Once slightly set, gently stir and cook to your desired firmness. Turn off the heat.
