- 🐟 270g cleaned sardines
Vegetables
- 🍆 160g eggplant, chopped
- 🧅 100g sliced onion
- 🧄 1 clove minced garlic
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp all-purpose flour
- 2 tbsp olive oil
Sauce
- 🍅 200g canned whole tomatoes
- 1 tbsp cooking wine
- 🧂 1/2 tsp salt
- 🧂 Pinch of pepper
- 💧 100ml water
步骤
Cut the eggplant into bite-sized pieces, slice the onion, and mince the garlic.
Cut the sardines into bite-sized pieces, season with salt and pepper, and coat with flour.
Heat 1 tbsp olive oil in a pan, cook sardines on both sides until golden brown, about 4 minutes, then set aside.
In the same pan, heat the remaining olive oil and sauté garlic until fragrant. Add onion and eggplant, cooking until softened.
Add canned tomatoes, cooking wine, salt, pepper, and water. Crush the tomatoes and bring to a boil. Return sardines to the pan, cover, and simmer on low heat for 7–8 minutes.
