Pasta
- 🍝 100g spaghetti
Canned Goods
- 🐟 1 can (70g) tuna in oil
Vegetables
- 🍆 1 medium eggplant
- 🧅 1/4 onion, sliced
- 🧄 1/2 clove garlic, sliced
Oil
- 1 tbsp olive oil
Seasonings
- 100ml water
- 🍅 200ml salted tomato juice
- 🧂 1/3 tsp salt
- Pinch of pepper
步骤
Cut the eggplant into 5mm slices. Slice the onion and garlic thinly.
Heat olive oil and garlic in a pan over low heat until fragrant. Add onion and eggplant, and sauté over medium-low heat until coated with oil.
Add canned tuna and sauté for 1 minute. Add water, tomato juice, salt, pepper, and spaghetti. Cover and cook for 3-4 minutes longer than the package instructions, stirring occasionally.
Uncover the pan and stir-fry briefly to evaporate excess liquid.
