    • 2 tbsp mirin
    • 🍬 1 tbsp sugar
    • 2 tbsp soy sauce
    • 💧 200 ml water

Cover with a drop lid and simmer on low heat for 15 minutes, occasionally spooning the broth over the fillets.

Remove the drop lid and continue spooning broth over the fillets for another 5 minutes.
